Cookies, Cookies, Everywhere!

Whew!  I have been baking up a storm....happily, I may note!  Here's a little sample of my handiwork!  I made this first platter for a fundraiser we had at our house.  Sadly, she lost in the primary...but the cookies were winners!

 These are for another friend.  She is running in the fall election.  This is a tireless woman who does soooo much for our community!  I support her fully!  It was fun to see these all over Facebook and Instagram from people at the party!

An 8th birthday!



 A sweet cookier named Lila Lola did a post on quick flower cookies.  I stashed that info, and suddenly found myself using it.  We lost a very dear friend and neighbor.  He was surrounded by his family in Pennsylvania, but our hearts ache.  His wife is a devoted cookie fan, so I decided to whip up a quick batch and mail them out.  They were so fast!  It was a great tip...I found it here.

 A friend needed a way to say thanks to some teachers...a sweet thank you is the best!  We bagged these and she slipped in a gift card.

 A sweet couple in our neighborhood went to DC and got married.  So some neighbors got together to celebrate after they got home.  So exciting!  Newlyweds! (More airbrush work...)

These cookies were no easy feat!  But I was pretty happy with the result!  My poor friend had to seriously describe these to a T for me.  I was so confused when she wanted an APP cookie!  I kept thinking APP was an acronym I should know! Glad we cleared up that confusion!

Cookies for a Good Deed

So I have had an interesting couple of weeks.  I had my wallet stolen and the thief went on quite a shopping spree. ($5,000 in under an hour.  Pretty impressive.)  I was pretty upset, especially considering that it had happened to girl in a store 2 doors down from where I work.  I don't know her circumstances, but I left my purse out of my locker.  It was covered up, but this woman went right back into our stock room and found it.  If I had known she had hit a store a few days before I may have been a little more careful.  So after the dust settled that day, I decided to go to every store in our shopping center and let them know what happened.  I didn't want anyone to think it couldn't happen to them.  When I got to the Vera Bradley store, the manager was so sorry that this had happened to me that she told me to pick out a new wallet.  Anything I wanted.  I was so shocked at the thought.  Such kindness.  I admit I was still a little wonky from all the events of the day, but I chose a new one.  I knew I would have to think of a good way to say thank you, so shocker, I made cookies.  I tried to make them in the colors of the pattern of the wallet, but there was a lot of navy, and I hate dark icing (stains your teeth!).  She loved them.  I wrote an heartfelt letter to her company because we all know that good deeds often go unnoticed, but piss off a customer and the letters will pour in.  She countered the evil deed for sure!

So my other cookie baking last week was for a 1st birthday.  This is obviously a big deal, turning one.  So when I got the invite, I decided that I would try my hand at chevrons.  I don't think I want want to make dozens of these, they are a bit tedious, but how cute!  The invite that inspired me is below.  This week, the volleyball coach is being honored at a baby shower.  So here we go...What are you waiting for?  Get in there!

Thank You, Grazie, Merci, Cheers

I know, I sound like a broken record. But we just don't say it enough. Thank You. Those simple little words can make someone feel like all of their effort was worth it, that someone noticed their hard work, that someone appreciated a little something they did. Thank you in my family is huge. Grandma and Grandpa have made it very clear, that those Christmas and birthday checks will come to a screeching halt if a thank you note fails to appear. I think that is a great policy. Even as my kids approach adulthood and spend less and less time at home, I still keep stacks of thank you notes handy for holidays and birthdays, and send a good amount of them myself.

As my daughter began Senior year, she came home with the paperwork for the Europe trip. This is a big deal. She and her friend had talked for the last 3 years about this trip, and I had every intention of going along. As I looked through the paperwork, the price, and the itinerary, I thought having been to 3 of the 4 destinations already, I could find something better to spend the money on. So we sent the paperwork in for Christina. As the trip approached, we found out only 10 girls were going and 3 very brave chaperones. Now don't get me wrong, these are nice girls. But 10 days with 10 teenage girls who will be without social media, getting up early and walking a lot of miles...it could get a little hairy. But the chaperones, they could not have been more suited for the job.

I really never worried about Christina traipsing around Europe. I knew the Dean was in the lead, and she told them to start walking before they left because their little feet would be tired. And the girls will tell you this woman can book it! Next was the guidance counselor who knows these girls so well as she helps them all prepare to go to the college of their dreams (Thank You for that too!) and the French teacher, who I wish had quizzed my 4-year French student all over Paris and made her chat it up with the locals! I know they were in complete control....and I am so thankful.

So I write thank you notes. And if you're me, you make thank you cookies. For the time in London, Cheers (their slang for thanks),
for the romp in Paris, Merci,
for the rainy days in Rome and Florence, Grazie,
and for bringing my sweetie home safe, Thank You.

The Sweetest Thank You

It is no secret to my friends and family that my very most favorite thing to eat and bake is sugar cookies. Not fluffy anemic looking cookies, but flat, crisp, buttery cookies with some sort of icing. Recently we spent a weekend at a friend's lake house, and instead of bringing a hostess gift, I decided to see what they needed in the kitchen. So after a fun weekend of skiing, good food and relaxing, I bought her a few essentials she needed and baked her "thank you" cookies. These were particularly fun, no rules, I kept them colorful and interesting. I used a pastry wheel and ruler to cut my squares and rectangles, and cutters for hearts, circles, fluted rounds. Any shape works, and the variety of shapes and colors made it a stunning thank you. Earlier this spring I posted the Springtime Sugar Cookies with my first video attempt. http://sweetiepetitti.blogspot.com/2009/03/springtime-sugar-cookies.html The icing for those cookies was a little more involved with the decorating tips and the icing was more of a buttercream knock off or fluffy frosting. The other sugar cookie method of icing is the Royal Icing.
Royal Icing is traditionally made with confectioner's sugar, egg white and water. Now that little egg white can churn up a big controversy. Let me just say, I am not compromised health wise, and neither is anyone in my immediate family. However, I share everything I bake, so I tend to use either Just Whites, which are a pasteurized egg product, or Meringue Powder, a product made from dried egg whites and put out by Wilton. The egg white is an integral part of Royal Icing. It lends to the sheen of the finished product and also the stability of it. The icing will dry hard as a rock so the cookies can easily be stacked. Also, the icing can be thinned to flow over the cookie. But, a word of warning, Royal Icing is very sweet, without the presence of fat there is nothing to cut that sugar. Some recipes call for a squeeze of lemon juice which does help, and meringue powder has a little citric acid in it, so it doesn't taste quite as sweet. I like many people find it to be the perfect contrast with the simple sugar cookie. But try both types of icing and decide for yourself. As stated many times on my blog, be sure to use gel paste food coloring for the most vibrant colors, use only real butter for the cookies and Nielsen Massey Vanilla in anything that calls for vanilla. If you are using white icing for your cookies, use the clear artificial vanilla from Wilton, it tastes terrible in comparison, but it gives the icing a boost.
Royal Icing
3 egg whites
4-5 cups confectioner's sugar depending on consistency
pinch of salt
water a few drops at a time as needed
In the bowl of electric mixer, combine whites, 4 cups sugar, salt and mix until combined. Turn up power and whip about 5 minutes until fluffy. Add additional sugar and or water to get the proper consistency. To substitute pasteurized whites, follow the measurement chart on the package. To substitute meringue party, follow the manufacturer's recipe that is included for the best results.
